Apricots – Great Nutrition, Fresh or Dried

I love summertime with all the fresh fruits! Our local farmer’s market has plenty of fresh local produce (more vegetables than fruit) as well as wonderful fresh fruit from growers in our neighboring Province of B.C.  This past weekend I picked up a case of apricots…..YUM!  Such a treat!  Most of those apricots are destined for the dehydrator (no additives) – either as apricot pieces or in fruit leather.  The idea is to be able to enjoy them over the fall and winter, but somehow I don’t think they will last that long!

Here’s the healthy scoop on apricots:

  • Contain vitamin A – an antioxidant that promotes good vision and protects the eyes from damage of free radicals.
  • Contain other antioxidants such as vitamin C, and beta-carotene.  The beta-carotene comes from the yellow orange color pigment.
  • Contain tryptophan and potassium
  • A good source of fiber

So – enjoy the fruits of the season!  It’s a great time to build the body’s immune system by eating whole fresh produce. A healthy immune system will keep us energetic, vibrant and healthy during the fall and winter months.
