This is a wonderful smoothie that is delicious and high in nutrition. It has a balance of protein (from hemp hearts and protein powder) and fiber, as well as loads of vitamins and minerals (from the fruit and veggies) – it can be a meal replacement. Enjoy!
Prep time: 5 minutes
1 apple, cored and cut into chunks
4 large strawberries, quartered
4 small apricots, halved and pits removed
1 baby English cucumber, cut into chunks
2 stalks celery, cut into chunks
1 large kale leaf (do not use the stem)
3 Tbsp hemp hearts
1 ½ scoops pumpkin protein powder (use scoop supplied with the powder)
2 cups coconut water or filtered water
Place all ingredients in a blender, food processor or VitaMix®, starting with the fruit and avocado. Blend until smooth.
