This is an easy salad to make and it is full of vitamins and minerals. Both broccoli and cauliflower contain high amounts of vitamins C, K, A and folate. Cauliflower also has anti-inflammatory and antioxidant properties, which help our bodies fight free radicals. The healthy carbs in this salad are great for giving us energy!
4 cups sliced fresh broccoli florets and stems
2 cups fresh cauliflower, chopped
¾ cup carrot, peeled and chopped or coarsely grated (or substitute red pepper)
½ cup chopped red onion or sweet onion
2 cups cooked chicken breast, chopped (approx. ½ cup chicken/serving)
¼ cup raw sunflower seeds
Mix all salad ingredients in large bowl.
Toss with desired amount of Raspberry Vinaigrette Dressing.
Raspberry Vinaigrette Dressing
½ cup extra virgin olive oil
½ cup raspberry wine vinegar
½ tsp powdered stevia
2 tsp Dijon mustard
¼ tsp dried oregano
¼ tsp black pepper
Mix ingredients well and store in the fridge in a glass jar.
