Creamy Broccoli Soup

Broccoli a cruciferous vegetable, and it is incredibly healthy.  It contains a long list of vitamins and minerals including high amounts of vitamins C, K, A and folate. Broccoli is also very good for the digestive system, as it contains a good amount of fiber.  This delicious soup is dairy free (uses coconut milk) and quick to prepare… enjoy!

Cooking time: 30 minutes

 

Ingredients:

2 to 3 cups broccoli, coarsely chopped

3 green onion, coarsely chopped

1 large carrot, peeled and coarsely chopped

2 cups vegetable stock

4 baby potatoes, chopped

1 cup frozen corn

1 cup frozen peas

handful of fresh cilantro, chopped

salt and pepper to taste

1 (400 ml) can coconut milk

 

Directions:

  1. Place broccoli, green onion, carrot and vegetable stock into food processor.  Process until smooth.
  2. Transfer processed soup base to a large saucepan.  Add chopped potato, corn and peas. Bring to a boil, and simmer about 25 minutes or until potato is cooked.
  3. Add fresh cilantro, salt, pepper and coconut milk.  Heat through.
  4. Serve with a garnish of fresh cilantro or celery leaves.
