Healthy Chocolate – Raw Cacao Balls

This is a raw, dark chocolate treat that is very healthy!

Raw chocolate or cacao (pronounced ca-cow) is a very nutritious food, and is often called a ‘superfood’.  It is high in antioxidants, which fight free radicals that damage our cells.  It also contains lots of minerals needed by our body, such as: magnesium, iron, chromium, manganese, zinc and copper.  Dates are a very healthy natural sweetener, and research shows that they won’t cause blood sugar problems – making them safe for diabetics to consume.

Prep time: 15 minutes

Yield: 24 balls

 

Ingredients:

½ cup raw cashews (or cashew pieces)

½ cup raw walnuts

1 cup pitted medjool dates

1/8 cup raw cacao powder

1/8 cup raw cacao nibs

 

Directions:

  1. Use a food processor.  Process nuts until they are nicely ground up.
  2. Add dates and cacao powder. Process until the mixture starts to form clumps.
  3. Add cacao nibs and ‘pulse’ to mix.
  4. Form balls and refrigerate.

 

This recipe can be doubled easily.

Raw Cacao Balls also freeze well.
