Healthy Recipe - Baked Potato Fries

Baby Baked Potato Fries – Gluten Free

This recipe uses baby potatoes instead of larger potatoes, because baby potatoes have a lower glycemic load (they won’t cause a blood sugar spike and crash the same way larger potatoes will).

Yield: 4 – 6 servings

Prep time:  5 minutes

Cooking time:  25 minutes

 

Ingredients:

2 to 3 lb baby potatoes, washed & cut into quarters

1 Tbsp extra virgin olive oil

salt & pepper to taste

Variation: use a spice or spice combination of your choice in place of the salt and pepper, such as Greek Spice or a rosemary and garlic combination.

Directions:

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl toss the potatoes with olive oil, salt and pepper.
  3. Spread the potatoes on baking sheets that have been lined with parchment paper (for easier cleanup).  Bake for 15 minutes, remove from the oven and turn the fries over. Return to the oven and bake for 10 minutes more, or until they reach the desired crispness.
  4. Serve immediately.

TIP:  Leftover fries will freeze very well.  Line a baking sheet with parchment paper, spread the leftover fries on the parchment paper in a single layer (fries should not be touching each other) and place in the freezer.  Once they have completely frozen – remove the fries from the parchment paper and place in a zip close freezer bag. They can be reheated in the oven at  350 degrees F for about 15 minutes.

Baked Sweet Potato (Yam) Fries – Gluten Free

 Yield: 4 – 6 servings

Prep time:  5 minutes

Cooking time:  20 minutes

 

Ingredients:

1 to 2 medium sized sweet potatoes, peeled and cut into ‘half moon’ slices

1 to 2 Tbsp extra virgin olive oil

salt & pepper to taste

 

Directions:

  1. Heat the oven to 425 degrees F.
  2. In a large bowl toss the sweet potato slices with the oil, salt and pepper.
  3. Spread the sweet potatoes on baking sheets that have been lined with parchment paper (for easier cleanup).  Bake for 20 minutes, turning the fries over after the first 10 minutes.
  4. For crispier fries: remove the parchment paper so the fries are directly on the baking sheet.  Put the fries under the broiled for 1 or 2 minutes, being careful not to burn them.
