Healthy Recipe - Baked Potato Fries

Baby Baked Potato Fries – Gluten Free

This recipe uses baby potatoes instead of larger potatoes, because baby potatoes have a lower glycemic load (they won’t cause a blood sugar spike and crash the same way larger potatoes will).

Yield: 4 – 6 servings

Prep time:  10 minutes

Cooking time:  30 minutes

 

Ingredients:

2 to 3 lb baby potatoes, washed & cut into quarters

1 to 2 Tbsp extra virgin olive oil

salt & pepper to taste

2 to 3 litres water

 

Directions:

  1. Bring the water to a boil; add a little salt.  Preheat the oven to 425 degrees F.
  2. Add the potato quarters to the boiling water and cook exactly 3 minutes.  Immediately drain the potatoes.
  3. In a large bowl toss the potatoes with olive oil, salt and pepper.
  4. Spread the potatoes on baking sheets that have been lined with parchment paper (for easier cleanup).  Bake for 30 minutes or until they reach the desired crispness, turning the fries over after the first 15 minutes.
  5. Serve immediately.

 

Baked Sweet Potato (Yam) Fries – Gluten Free

 Yield: 4 – 6 servings

Prep time:  5 minutes

Cooking time:  20 minutes

 

Ingredients:

1 to 2 medium sized sweet potatoes, peeled and cut into ‘half moon’ slices

1 to 2 Tbsp extra virgin olive oil

salt & pepper to taste

 

Directions:

  1. Heat the oven to 425 degrees F.
  2. In a large bowl toss the sweet potato slices with the oil, salt and pepper.
  3. Spread the sweet potatoes on baking sheets that have been lined with parchment paper (for easier cleanup).  Bake for 20 minutes, turning the fries over after the first 10 minutes.
  4. For crispier fries: remove the parchment paper so the fries are directly on the baking sheet.  Put the fries under the broiled for 1 or 2 minutes, being careful not to burn them.
