Healthy Recipe: Quick Black & White Chili

This is a healthy, delicious and interesting chili recipe using turkey instead of beef.  It contains lots of protein, and the beans also contain fiber.  The spices can be adjusted to suit your taste.  A good recipe for a chilly winter day! Enjoy!

Healthy Recipe: Quick Black & White Chili

Prep time: 5 minutes

Cooking time: 25 minutes

Servings: 6

 

Ingredients:

1 Tbsp coconut oil

1 lb ground turkey

1 onion, chopped

2 cloves garlic, minced

2 large carrots, peeled & chopped

2 stalks of celery, chopped

3 cups chicken stock, low sodium

1 can white kidney beans, drained & rinsed

1 can black beans, drained & rinsed

½ tsp ground coriander

½ tsp ground cumin

¼ tsp sea salt

2 tsp chili powder (or to taste)

¼ tsp cayenne powder

juice of 1 lemon

½ cup frozen corn

½ cup frozen peas

1 tsp balsamic vinegar

garnish: chopped fresh tomato, cilantro or parsley

 

Directions:

Heat the coconut oil in the bottom of a large pot.  Add the turkey, chopped onion, and garlic.  Cook until turkey is no longer pink.

Add all the other ingredients, except frozen vegetables and vinegar.  Cook for about 10 minutes on medium heat.  Add the corn, peas and the vinegar.  Cook for another 5 or 6 minutes.

Serve this healthy recipe with chopped tomato or cilantro or parsley as a garnish.
