Kale, Pear & Walnut Salad with Mustard Vinaigrette Dressing


This is a nutritious and delicious, gluten free, vegan salad.  Pears are high in fiber: one pear is about 5 grams of fiber, apples have slightly less fiber.  Raw walnuts are high in omega 3 fatty acids and have protein.  Kale is loaded with vitamins and minerals .  The fiber and protein combination also make this salad low glycemic. Goat cheese is often agreeable for people who do not eat cows milk dairy products.  For a stronger contrast in flavours – try blue cheese (cow’s milk) in place of goat’s cheese.  Enjoy!

Kale salad full of antioxidants


2 slightly firm pears (or firm apples – Fuji or Gala) cored & chopped

3/4 cup raw walnuts, broken into pieces

¼ long English cucumber, chopped

8 – 12 cups Kale leaves (not the stems) – coarsely chopped

½ cup Goat Cheese, crumble

  • Toss all ingredients, except cheese, in a bowl.  Toss with Mustard Vinaigrette Dressing, using as much dressing as desired.  Sprinkle crumbled cheese on top and serve.


Mustard Vinaigrette Dressing



2 Tbsp coconut vinegar (or white wine vinegar)

1/3 cup olive oil

1 ½ tsp Dijon mustard

1 clove garlic, minced

¼ tsp sea salt
