A frittata is essentially a quiche without a crust, and it can be made without dairy products. Quick and Easy Veggie Frittata can be varied by changing up the veggie ingredients or by adding spices to suit your tastes. This recipe came from The Egg Farmers of Ontario, via Allrecipes.com. To serve 2 to 3 people, the recipe can easily be cut in half. Enjoy!

1 Tbsp butter
1 cup sliced mushrooms
½ cup chopped green and/or red pepper
1/3 cup chopped onion (green or bulb onion)
¼ cup water
- Over medium heat, melt the butter in a medium (10 inch) oven proof frying pan (see note below). Add mushrooms, peppers and onions. Saute until tender.
- While the vegetables are cooking, whisk together the eggs and water. Pour the egg mixture over the vegetables in the pan. Cover and cook over medium heat, occasionally poking through the mixture to allow uncooked egg to flow to the bottom of the pan.
- When the bottom of the egg mixture is cooked and the top is almost set, place the frying pan under a preheated broiler until the top is cooked and slightly puffed – about 1 or 2 minutes.
- Cut into pie shaped wedges and serve with a tossed green salad and/or colorful vegetables.
NOTE: to oven-proof the handle of a frying pan, wrap it with a double thickness of aluminum foil.
