Summer Berry Salad
This delicious salad is full of vitamins, minerals & antioxidants. It can be made with meat or with vegetarian protein. Enjoy!
½ cup fresh blueberries
3 or 4 large strawberries, sliced
Mixed organic salad greens, enough for 1 or 2 main course salads
¾ to 1 cup mixed chopped raw vegetables (broccoli, celery, cucumber, tomato, etc)
½ to 1 cup protein of your choice (cooked chicken, cheese, chick peas, black beans, turkey slices, ham, etc)
Mix together and serve with Raspberry Vinaigrette Dressing.
Raspberry Vinaigrette Dressing
½ cup extra virgin olive oil
½ cup raspberry wine vinegar
½ tsp powdered stevia
2 tsp powdered Dijon mustard
¼ tsp dried oregano
¼ tsp black pepper
Mix ingredients well and store in the fridge in a glass jar.
